When brewing coffee, beans should be at room temperature, and the water should be between 195°F and 205°F. If the temperature is above 205°, it can scald the beans and create a burnt taste. If the temperature is below 195°, the coffee will be under-extracted.
While the temperature to drink and enjoy your coffee is entirely a matter of personal preference, we find that the “sweet spot” for drinking coffee is between 120°F and 140°F.
The reason for this is that coffee’s notes really shine between 120° and 140°. The subtleties of the roasting process will come out within this range, creating a very enjoyable cup.
